Hooray! It’s officially time to head back to school for us! It seems that a large majority of the country has already started school while we’ve still been over here soaking up the final days of summer. We have just 5 days left until my kiddos head back to preschool. So, this week I have been busy finishing up school supply shopping, picking out first day outfits, and doing some meal planning for the week ahead.

With two little preschoolers to get out the door every morning, I know firsthand how chaotic school mornings can be. As most of our regular readers know, my youngest, London, has a very severe dairy allergy. And honestly, some days I struggle with meal planning for her – especially when it comes to breakfast. She isn’t a big cereal eater, and I can’t just pop a frozen waffle in the toaster (spoiler alert: they all have dairy in them). Dairy-Free Fruit Dip

Dairy-Free Strawberry + Banana Smoothie

Grab a handful of frozen (or fresh) strawberries, 1/2 a banana, 4 tablespoons of So Delicious Dairy Free® Strawberry Banana yogurt alternative, and a splash of apple juice. Blend on high until smooth. Increase or decrease the amount of apple juice based upon how thick you prefer your smoothies to be. These mini blueberry oat muffins are a huge hit with my kids. They are made with the NEW So Delicious Dairy Free® Key Lime yogurt alternative, which adds just the right amount of tartness to these bite sized muffins! They are dairy-free, gluten-free, and sweetened just a touch with honey. Because my kids love them so much, I like to pack a few in their lunch, too!

Dairy-Free Mini Blueberry Oat Muffins

Makes 24 mini muffins

Prep Time 5 minutes
Cook Time 10 minutes
Total Time 15 minutes

Ingredients

  • 1 cup So Delicious Dairy Free® Key Lime yogurt alternative
  • 1 cup blueberries
  • 2 eggs
  • 2 cups quick oats
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 4 tbsp honey

Instructions

  1. Preheat oven to 375 degrees. Grease mini muffin tin with coconut oil or your favorite cooking spray.

  2. Pour all ingredients into blender, with the exception of blueberries. Blend on high until oats are finely ground. Stir blueberries in by hand.

  3. Fill mini muffin cups 3/4 full. Bake for 10-12 minutes or until toothpick inserted in center of muffin comes out clean.

  4. Cool for 5 minutes before transferring muffins to cooling rack.
